I'm now at the point where I'm near the end of the Dwarven Chapter 6, and it looks as though I've made all the copper I need now. Is it safe to start selling these off these in preparation of the Fairy Chapter?

yes the copper and granite mines can be sold when you have enough of copper and granite for research/roads. There is a quest to sell the dwarven portal in fairies

Just make sure to keep a little extra supply of copper and granite if you think you might want to build any more dwarven roads.
