I've tried basic and other goods, I've even spent diamonds to finish a 9 hour production of gems, but it's not updating the quest. Any ideas?

What is the exact wording of the quest?
Pressing the "i" should tell you what is required but from experience the 9 hour ones are usually supplies
or basic goods(marble/steel/planks) 
To add also sounds like you are confusing Crystal
with Diamonds 
as you cannot use Gems 
to speed up a production.
If still stuck contact support for help, try refreshing the game first though.
