I just started Amuni chapter and I have a quest to deliver 5000 orcs. I have no idea what this means and would appreciate some help.

If I understand/remember correctly, when you open the quest window, there will be a progress bar with a + sign. Click on that to hand over the orcs. You'll be limited to how many you have in stock or how many you want to donate at that time.
