Is there a quick way to tell how many provinces and types of provinces I have completed.

I am not aware of any way to see what kind of provinces you have completed but if you go to the tech tree and go the start of the next chapter you will see how many provinces you have completed out of the required number you need to open the chest to start the new chapter. Hope this helps.

You can also check the total number of discovered provinces in the construction menu by selecting the next Province Expansion. Just an FYI.
